Spring Cake, the ancient recipe of Arbëresh tradition

This simple and delicious dessert has its roots in the ancient Arbëresh tradition.

The fruit-packed noodles is a very special recipe that in the Arberesh family goes from generation to generation to nowadays.

Named otherwise Pitta N'Chiusa, which means "closed noodles", this is the traditional holiday cake for the Arbëresh community in Italy.

Typical for holiday events, this recipe is one of the most popular and simple foods in all Arbëresh villages in Italy.

Ingredients:

500 gr flour

1 teaspoon of salt

1 teaspoon of baking soda

100 ml of olive oil

2 eggs

1 teaspoon cinnamon

100 gr of raisins

100 gr of nuts

100 g of almonds

100 hazelnuts

100 g of sugar

250 honey (optional)

150 - 200 ml of water

Preparation

You should start with the dough preparation.

Combine flour, sugar, water and salt.

As you mix the flour, pour the baking soda and continue to work the flour until the dough is formed.

Leave the source to rest for a few hours in a dark, dry place. Then divide the dough into 4 - 5 small balls.

Take one of the small pieces of dough that splits and start to open an average noodle, like a pizza dough. Occasionally sprinkle the noodles with flour to prevent them from sticking.

Do this until you have more doughs.

After you open the noodles, rinse them with olive oil and sprinkle with a little sugar.

Grind the nuts and dried fruits by mixing them with sugar, cinnamon and honey as desired by spooning them over the entire surface of the noodles.



Cut the noodles in thin belts and then round up each noodle in the form of a rope.

The noodle will take the shape of a rose.

Place next to each other in the baking tray and cook at 180 degrees for about 40 minutes until the noodles get a golden color.

Let the dessert cool and then taste it.
