Mantija, Kosove pie filled with yogurt and garlic

A fantastic flavor. In fact, Mantija is a cooking originating in oriental cuisine.

In Kosovo, Mantija is widely prepared in all provinces not only by housewives but also served in different stores or even traditional restaurants.

Preparation of the Kosovo Mantija at Home

Ingredients

1 kg of flour,

2 cups of warm water,

2 tablespoons of olive oil

Salt for the dough

Two cups of slightly diluted yogurt

Two to three garlic cloves

Filling

For filling you can use ingredients according to preference, minced meat prepared with onions and tomato sauce, cottage cheese or cheese with eggs.

If you use chopped fillings then you will need 600 gr of minced meat, one or two onions and some tomato sauce.


If you use fillings with curd cheese, as in the case below you will need 500 gr of salty cheese and one or two egg as desired.

Preparation

On the kitchen table or on the baking tray, put the flour, warm water, olive oil, salt and butter and are mixed by hand until the mixture becomes homogeneous.

Next, the dough is divided into 30 small balls.

We open each of the ball through a rolling pin in the form of a noodles, not larger than the handpiece.

Then we lubricate the balls with a kitchen brush with freshly butter.

Then merge ten opened balls one by one by emaciating then through a rolling pin.

The same way operate with other 20 balls by creating two large foils with them.

Then, attach the three large balls into a single one and divide them into squares suitable for the filling with cottage cheese.

Add to each square a tablespoon of cottage cheese (or by preference), then wrap diagonally across the four sides (as an envelope) and put them in the baking tray for baking.

Mantija get baked for about 30 minutes (250°). Once baked, is poured above yogurt diluted with a little water, salt and minced garlic. You can add some fresh thin cut mint.
